Good old leftovers:)

Hello,


Tonight was a quick and easy one... leftover chicken casserole with mashed potato...wasn't that fussed with it the first time so added some Philadelphia light cream cheese to it and it did improve it:)


I have to say I'm loving my slow cooker...such a life saver for us Mums!!

Birthday Weekend Food Update:)

Sorry its been a while since posting as I had the big 40 birthday last Thursday and was fortunate to have a night away at Watson's bay in Sydney with my husband while my M-I-L kindly looked after our 3 kiddos.


SO...here is the food update of what we had for dinner:)


27th May...Birthday dinner of crepes, with either bolognese or chicken mornay sauce, salads, followed by a delish Cheesecake shop Boston Mudcake:0


28th May...what a taste sensation!!! We had dinner at the seafood restaurant Doyles at Watson's bay on the harbour in Sydney and all I can say is that is was amazing.  The service was fantastic and we overlooked the harbour and lights of the city.  We had a mixed selection entree which included prawns, scallop mornay, smoked salmon and a lightly battered prawn that also had in it a mixture of sultanas, bacon and pinenuts.
And for main I had John Dory fillets with steamed vegetables and I highly recommend it.  For dessert we shared Chocolate terrine which was like a slice of fudge with layers of dark, white and milk chocolate on top of marinated strawberries in Cointreau with vanilla bean icecream...SO delicious!!

29th May...we took my M-I-L out to say thanks for looking after the kiddos to an Italian restaurant called
Il Porcellino in Balgownie.  The servings were huge and delicious.  I shared a garlic prawn and tomato entree and for main had an amazing dish called a Veal and Vegetable stack.  SO many vegies in this dish it was great. And then we were far too full for any dessert:)


30th May...Dinner cooked by my M-I-L of chicken and corn pie which was basically like a frittata with chicken, zucchini, eggs, corn kernals and topped with cheese.  It was delicious.


31st May...Chicken Terrine from the Bodytrim eating plan I follow's website.  It is like a chicken meatloaf with chicken mince, breadcrumbs, egg, worcestershire sauce, and I add frozen mixed veg into mix and back in a loaf tin.  Served with low joule chutney and veggies on the side.


1st June...Slow cooked Chicken casserole.  I adapted a casserole recipe to use in my slow cooker so it had Continental Spring vegetable soup mix, chicken breast fillet, chicken stock, mushrooms, carrot, and mixed veggie frozen mix added in.  Not my most favourite casserole but still ok.


2nd June...tonight I tried a new recipe from the Kraft Philadelphia Cream cheese recipe book.  It was Beef and Red Wine Ragout and I adapted it again for the slow cooker and it was a hit with the whole family!!  I added beef coated in plain flour, 1 cup red wine, around 3/4 cup beef stock, small onions quartered, mushrooms, carrots, 1/2 cup tomato paste, and then about 1 hour before serving I added some frozen peas. About 1/2 hour before serving  I whisked up with some juices from the casserole with 125g Philadelphia light cream cheese and stirred through casserole. I cooked it in my slow cooker for approx 5-6 hours on high and in the last hour turned heat down to low.
