Chicken and Asparagus Casserole

Hello,


Chicken and Asparagus Casserole was on the menu tonight which is a recipe given to me by my Mum.
The recipe is:
Cooked chicken
340g can drained asparagus cuts
tin condensed asparagus soup (or chicken or mushroom soups)
Cup evaporated skim milk
2 tbsp Sherry
4 tbsp grated cheese
1 Onion chopped and fried
Paprika


In Casserole dish place chicken, cover with asparagus and cooked onion.
In saucepan place milk, sherry, and soup. Heat gently and don't boil.
Pour sauce over casserole
Cover with cheese and sprinkle with paprika
Cook in oven at 200 degrees C for 15-20 mins until heated through.


Serve with rice and vegetables.


I tend to use my stove wok pan and cook the onion and chicken in it and then just add the milk, sherry and soup to this and heat through.  Then I pour it all into the casserole dish over the asparagus cuts, sprinkle with the cheese and paprika.  Its up to you whichever way you want to do it as they both work fine.

Pork Escallopes

Hello,


Tonight was Pork Escallopes which is from the Bodytrim Cookbooks and this one from the Italian book.  Bodytrim is the way I eat these days more or less and it seems to work in keeping my weight under control.


It's very easy and delicious.  I used pork scotch fillet and cooked them in the pan for approx 1 min each side to brown.  Then put them in a baking dish and spread sundried tomato pesto sauce on top of each (the recipe says basil pesto but I prefer the sundried tomato flavour) and topped them with a mixture of shredded zucchini, grape tomatoes cut in half, small amount of light sour cream, and pepper.  I then sprinkled them with shredded cheese and basil.
They then get roasted for about 20-30 mins or until cooked and there it is!

Just Leftovers tonight:)

Hello,

Being Sunday, meals in our house are generally pretty simple and today's meal was really easy as we just ate leftovers:)
We had delicious lamb steaks from Bushs Meats butchers called 'Lamb Delights'.  They put a bit of a seasoning thing in the middle with some shredded cheese on top and then you roast them.  So we had more of those with roast veggies,green veggies, gravy and mint sauce...yum and very easy!!

I am often trying now to make a larger double quantity when I cook and then have it for two meals having  break of something different on the day in between so it doesn't get too monotonous.  Its working wonderfully when you're busy as it does give you break days in the week without having to eat out or get takeaway.

Here is a pic below of some uncooked 'lamb delights'...not the ones we had as ours had shredded cheese on it too but it gives you the idea of what the cut of meat looks like to buy.

Starting off a new blog...of what we end up eating each night and seeing what happens:)

Hello,

My name is Anna and I'm an Australian Mum of 3 kids who is feeling like trying an experiment by blogging what we end up eating each night to see what happens:0

I love trying new recipes and foods...but I don't know about you but the whole meal planning and cooking can be quite overwhelming at times.

So the latest thing I'm doing and its working so far is that I've compiled a list of all the meals I cook from all my recipes and some that I'd like to and then using those to do a monthly meal plan.  Life with 3 little ones 6, 4 and nearly 2 keep me crazy busy most days as well as that my husband is the minister in charge of our church so I need to be organised with these meals so the wheels don't fall off around here:)

Anyway I thought it might be fun to create another blog that was just about what we eat:)  Could be very boring or quite entertaining...we'll see!!

I will try and get organised and take some pics to go with the meals if I can too.

BUT tonight sorry no pictures...

We had a meal called 'Roma Chicken' from the 2nd  4 Ingredients Cookbooks and it was yummy.  I used chicken breast fillets, chopped in large slices, cooked them on the stove wok, then added a jar of tomato pasta sauce, chopped capsicum and then just before serving added a couple of tablespoons of light sour cream.  Served with pasta (I don't eat pasta at night but the rest of the family do), carrots, beans, zucchini, and broccoli.

This is only a photo...not the real thing but ours looked pretty good too:)

We don't usually eat dessert but tonight we ate Sticky date pudding that I bought today at a local fete...mmmmm twas extra good:)
